Well it depends what you're doing.

No job is without stress, and due to the unreliability of a platform like YouTube it is definitely not a stable venture for any career. It's great that these people can do something they're passionate about and I dare say a lot of them don't put a lot into it and get a lot out of it, but I usually don't watch those channels anyway.

You can work on something you care about and still have it be a time consuming, difficult and stressful mess. I mean, I was running a gaming channel on the side and I can't do it anymore because it's exhausting. To write a script, get the footage, edit the footage etc took me like half a day at the bare minimum, and mine were relatively simple. Making videos for my music channel was way, way harder and something I rarely do because its a giant pain in the ass.

I'm not saying its hard or these people deserve pity or anything like that christ no, I'd be over the moon to be paid to do that crap all day, but it isn't easy and it isn't little effort.

I'd bet some office jobs with routine schedules or responsibilities / career stability in general are less stressful than what some YouTubers are doing every day to think of original content, record it, edit it, and get it up in a reasonable amount of time, otherwise they struggle to make a living. Like Kay said, it varies from YouTuber to YouTuber, but a lot of them work harder than you think they do. Successes and failures impact them just as any other career successes and failures would impact a person. Same goes for emotional or psychological feelings you have about your career--just as someone working in an office for 15 years may feel depressed about a job that could feel mundane or stressful, many YouTubers suffer from similar feelings behind the scenes because of roadblocks they encounter in what they do.

As for "trying to make it anywhere in the real world," YouTube is the real world despite the stigma that because they're behind a camera on the Internet for a living, it doesn't mean they're doing anything of substance. The skills that a lot of them have developed in creating their videos are "real-world" skills that are applicable to "real-world" careers.

it's such a badly organised system that there's no reliability in the amount of income you recieve per view depending on the day. You use Pewdiepie as an example of a rich youtuber but he is the biggest and the richest, by miles. Theres roughly 2,000 youtubers with over a million subscribers, but they're not all millionaires. They're living off of it, sure, but its widely different depending on the youtuber. 

Oh I understand all of that, but what it all comes down to is that because of how big you get on youtube, you can make a shit ton of money by being on youtube, with the majority of your money not actually coming directly from youtube.

Then there is also Twitch, which really makes me feel like a failure when I see a gif like this from yesterday:

As far as I know, all this guy does is react to and talk about Nintendo stuff (I hate reaction videos, I really really do), but look at his donations there, the latest one was $100.00 and the top of the day (at least at the time) was $300.  Its not hard to believe that he made at least $1,000 yesterday alone.  Just by watching Nintendo's latest direct and losing his shit over some Arms and Splatoon 2 news.

I only follow a few gamers who play the games I play. Ravic for Battlefield, Macie_Jay, Serenity17 and Remorce for Rainbow Six Siege, THERUSSIANBADGER for both. I mostly watch their streams though, but I put a youtube video on every time I eat.

As for the money thing, someone like Macie_Jay lives off ad revenue and donations. He gets about 500 000 views per video and several thousand watch him stream (which he does pretty much every day). Mentioning this just to point out that you can make a living without being anywhere near as popular as some pewdiepie.

I don't follow a ton, I enjoy angry grandpa and his kid even if it's fake it's not over the top bad imo.

i use to watch mcjuggernuggets but the dude took fake to a whole different level of annoying. 

ARTV isn't too bad for music reviews.

I've listened to quite a few so will def give that a listen, bet he's got some stories to tell. 

The Alan Shearer one is class as well, also a big fan of the Fake Taxi guy and how he built his porn empire and his mental health battle - that one is probably my favourite.

Pure bullshit what she was doing , more fool the people that spent money on it. His podcasts with Geordie were good. Lawrence makes the podcasts so much funnier though, he's a proper Partridge wannabe haha.
